Weingut Horst Sauer (Volkach, Fränkisches Weinland)

The load-bearing capacity of the old house floor has been cleverly used to place new things in and on it. The winery of Horst and Magdalena Sauer and their daughter Sandra Sauer was thoroughly renovated and redesigned ten years ago, and its guests encounter a bright lobby adjoined by the tasting areas. At the end of this path to wine, the treasure chamber contains the pumice stones with the best drops inside. These often come from the steep slopes that rise almost vertically to Vogelsburg just a few meters behind Horst Sauer's estate.

But the fact that great wines are also created in the mind has long been the credo of this sensitive winemaker. And as he says this, Horst Sauer picks up a few pieces of shell limestone lying around, rubs them vigorously against each other, and lets the astonished observer smell the stones. Mineral, metallic, a bit like steel, are terms that pop into the visitor's head. And yet, later, when he tastes Sauer's white wines, the impression that the nose got at the vineyard comes back unawares and undisguised. That's how wine works, one is tempted to say casually. And that's how it smells and tastes when a white wine turns blue-violet on the palate. The connoisseur's head is also thinking. The memory of the scent of the stones lingers on the tongue during tasting. The Sauers want to signal consistency, permanence and lastingness with the timelessly classic design of their winery. If this also suits the wines - the connoisseur will be pleased.
